Ingredients:
8 lb prime rib roast
3 garlic cloves diced small
1/2 cup diced onions
1/8 cup olive oil
2-1/2 tbs Gary's Seasoning
Prep Time: 15 min
Cook Time: 4 hrs
Total Time: 4 hr 45 min
Directions:
1. Preheat oven to 500°
2. Trim off the excess fat and cut into small pieces
3. In the roasting pan, add the olive oil, diced fat, garlic, carrots & onions
4. Add the prime rib roast and cook for 20 minutes
5. Turn down to 275°
6. Cooking time is 27 min per pound
7. Internal temperature 130° for medium and 120°-125° for medium rare
8. Take out of oven and cover with foil
9. Let rest for 30 min before cutting
