Albondigas Soup

Meatball Ingredients:
1 lb lean ground beef
1/2 medium onion, minced
2 tbs breadcrumbs
1 tbs fresh mint, or 1 tsp dried
1 egg, slightly beaten
1 tsp Gary's Hot for Mama Blend
1 tbs uncooked rice

Soup Ingredients:
1 can whole tomatoes
1/2 onion, chopped
2 cloves garlic, minced
1 tbs vegetable oil
6 cups chicken or beef stock
2 carrots, sliced
1 tbs Gary's Hot for Mama Blend
optional: celery, corn, peas, cilantro

Directions:
1. Place all the ingredients for the meatballs in a bowl and mix together thoroughly.
2. Form small meatballs 3/4 - 1" diameter.
3. Moisten your hands frequently with cold water to prevent the meat from sticking.
4. Drain juice from tomatoes and save juice for later. Coarsley chop the tomatoes and set aside.
5. In a soup pot saute onions and garlic in hot oil until soft.
6. Add stock and bring to boil.
7. Slowly add the meat balls and bring to a second boil.
8. Reduce heat, add tomatoes and tomato juice, cover and simmer for 20 minutes.
9. Add the rest of the veggies and Gary's Seasoning.
10. Continue cooking 30 minutes at a simmer. Serve with salsa, sour cream or fried tortillas.
